Buffalo Chicken Wings

One of your goals should be to take a unhealthy favorite dish and turn it into a healthier version. This is really important if you have children because many of the dishes they love are down right unhealthy. One gift I have been given is to be able to look at a recipe and think of ways to spin it into a healthier version- one that won’t create illness AND tastes delish!

I am not too sure what my Italian grandmothers may say when I change up their heavy meat an cheese filled dishes, but I know I am ever so proud of my abilities. Now, when I am trying to create a healthier version of an unhealthy favorite dish, it takes many tries of using different ingredients and also cooking methods. The rules that have to met are:

  1. The ingredients used must be healthy and as fresh as possible.
  2. Whenever possible use certified organic and non-gmo ingredients.
  3. Bad ingredients are removed and not allowed.
  4. Bad cooking methods are not allowed.
  5. My family has to approve of it (and if the teenagers love it, I know it is a hit).

I think #5 is the hardest to accomplish actually which is why I am so excited to share my final Buffalo Chicken Wings recipe that my two teenage sons just love. Their obsession with buffalo wings in restaurants was driving me crazy so I set out to create a recipe at home that would be healthier and a big hit. I didn’t expect them to love this one because it is so basic, but they went nuts.

I also was thrilled to find our local food store to have antibiotic, hormone and range free chicken wings which to me tasted better than any conventional brand. So here it is.

Buffalo Chicken Wings Recipe

Ingredients

  • 2 lbs of chicken wings
  • 1/2 cup or original Frank’s hot sauce
  • 1/4 cup extra virgin olive oil
  • Sprinkle of black pepper
  • Sprinkle of garlic powder

Instructions

Turn on your outdoor grill and set to medium heat. Place chicken wings on large plate or tray spread out. In small bowl, put extra virgin olive oil. Lightly brush each chicken piece with oil. Sprinkle with pepper and garlic. Turn pieces over and repeat. Put each piece onto grill, flipping each piece as they brown. The trick here is getting the pieces crispy and golden- flip and pay attention to cooking them. Put Frank’s hot sauce in sauce pan and heat until hot. Then put into large bowl. When chicken is done, put chicken pieces into bowl and toss, smothering them with Frank’s sauce. Put onto a plate and serve!
