Berry Bash Salad

This is a great summertime salad. I love to make it for a Fourth of July picnic because it is so colorful and healthy. You do not have to attend or host a summertime BBQ that serves unhealthy foods. BBQs and picnics are not excuses to eat unhealthy or cheat days.

Instead, make a healthy salad like this one that you can serve or bring to a BBQ. All you have to do to make it a perfect healthy meal is add 3 0z of a healthy protein, such as grilled chicken, fish, avocado, beans, legumes, nuts, or seeds. If you use all certified organic ingredients, you will up the health factor as well. I serve this with certified organic extra virgin olive oil and balsamic vinegar to taste.

Berry Bash Recipe

Ingredients

  • 1 head of organic romaine lettuce (or 3 stalks- you also can use spring medley mix)
  • 1 cucumber, skinned and cubed
  • 1/2- 1 cup of organic raspberries
  • 1/2- 1 cup blueberries
  • 1 cup black berries
  • 1 cup strawberries, halved

Instructions

In large bowl put romaine lettuce. Top with rest of ingredients, mix and serve.
