Egglicious Oatmeal Bowl

This bowl I didn’t think would taste as amazing as it does. Honestly, I could not imagine egg with oatmeal. Let me tell you if you haven’t tried this bowl, you have to. I fell in love with the first bite. The mix of the veggies, egg and oatmeal is a perfect blend, AND you are getting your prebiotics, vitamins, minerals, antioxidants, healthy protein and more all in one meal.

This recipe is Kind Gut™ (leaky gut) approved which makes it rock even more. If you have found gluten to be a trigger food, remember to buy gluten-free oatmeal. You also can of course, swap any of the veggies for another leaky gut approved one if you feel the need to do so.

I use organic egg, oatmeal, tomato and spinach to avoid pesticides, herbicides and fungicides. You can find gluten-free oatmeal here too. Enjoy!

Egglicious Oatmeal Bowl Recipe

Serves one so double up if you need more!

Ingredients-

  • 1 cup cooked plain oatmeal
  • 1 organic free range egg
  • 1/2 avocado, sliced
  • 1 lb. fresh organic spinach
  • 1 -2 garlic cloves
  • 1 tablespoon onion, diced
  • 3 small fresh organic tomatoes, Capri style (or use 8 cherry tomatoes, halved)
  • 1 teaspoon of chia seeds (you can use flax meal too)
  • 1 tablespoon of organic extra virgin olive oil

Instructions

In pan, put oil, garlic, onion and spinach, saute until spinach is cooked. Put aside in small bowl. In same pan, crack egg and cook one side for 2 minutes, flip and cook other side for another 2 minutes. Put cooked oatmeal in serving bowl. Top with spinach, egg, tomato, chia and avocado. Serve!
