Quinoa Crust Veggie Pizza

I love discovering new healthy recipes such as this one. This is a big hit in my family since traditional dough and bread today is so processed and loaded with chemicals that it has become unfriendly to the gut. One of the main principles of my Kind Gut™ program is removing harmful chemicals in my patient’s food choices. I also teach how to choose grains and carbohydrates correctly, avoiding the bad ones which is why this recipe rocks. Quinoa is one of my leaky gut friendly grains! I f you remove the cheese from this pizza and load it up with fresh farmer’s market bought veggies and even some fruit instead, you not only make this pizza leaky gut approved, but super healthy!

It is a huge hit for kids, so get them at the farmer’s market and in the kitchen. I like this quinoa  and sea salt as they are top notch.

Quinoa Crust Veggie Pizza Recipe

Ingredients

Quinoa Crust

  • 3/4 cup uncooked quinoa
  • 1/4 cup water and water for soaking
  • 1 tsp. baking powder
  • 1/4 tsp. Pink Himalayan sea salt

 

  • 1 ½ tablespoon of extra virgin olive oil or coconut oil (or use cooking spray instead)
  • 1/4 cup fresh basil leaves
  • 1/4 cup olives, sliced (you could use tomato or pizza sauce)
  • 10 cherry tomatoes, halved
  • Sprinkle of fresh mozzarella cheese*
  • Parchment paper
  • Fresh vegetable of you choice *

*Toppings are optional. Try other veggies –go for organic pineapples, eggplant, broccoli, green bell pepper, etc. Also, cheese is inflammatory and not leaky gut friendly, so remove it if experiencing health issues. This is leaky gut without the cheese and using fresh vegetables or fruits as toppings.

Instructions

Preheat oven to 450 degrees. Place the quinoa in a small bowl. Pour about 1 inch of water over it and let soak overnight (or for at least 8 hours). Drain and rinse the quinoa. Place the quinoa, 1/4 cup water, baking powder, and salt in food processor. Blend until smooth and dough is formed. Cover a 9 inch round pan with parchment paper. Spread oil onto parchment or spay with cooking oil. Pour dough like batter in pan and spread out using a spatula. Bake for 15 minutes. Remove and top with tomatoes, cheese*, basil  and favorite vegetables. Bake for 10 more minutes.

  • ½ cup organic spinach leaves
  • ½ cup organic red bell peppers, sliced
  • Sprinkle of fresh mozzarella cheese*
  • Parchment paper
