Cauliflower Popcorn

Cauliflower is an amazing alternative to many not-so-healthy foods that our families just love. I know, the sound of cauliflower replacing your popcorn is not so exciting. However, cauliflower can provide some very healthy snacks especially for kids and those suffering from chronic health issues. In fact we use cauliflower as a safe go-to alternative in my Kind Gut ™ nutrition program where patients eliminate certain foods that trigger chronic health problems such as diary, gluten, grains and corn. Believe me, cauliflower can save the day!

You can imagine how happy my patients are to find cauliflower to be their super hero. Cauliflower helps with leaky gut repair, replacing trigger foods with healthy snacks and provides the body with important nutrients. It is loaded with vitamin C, and is also good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese.

Cauliflower is a healthy snack super hero for sure! My patients are even more thrilled to add leaky gut cauliflower recipes if they find their bodies deficient in vitamin C, vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese.  How better to repair these imbalances than with REAL food?

In this recipe I buy certified organic cauliflower when available to eliminate pesticide exposure. I also use this certified organic extra virgin olive oil and black pepper and Pink Himalayan Sea Salt . Give cauliflower popcorn a try! My kids love these and yours may too! And, they are really easy to make which for me, is a win!

Cauliflower Popcorn

Ingredients

Bunch of cauliflower washed, and cut off stalks into edible pieces
1 tablespoon of olive or coconut oil
Sea salt and pepper

Instructions

Cut cauliflower into edible size snack pieces you like- the smaller the more it resembles popcorn. Put in a bowl and mix cauliflower with oil. Sprinkle with sea salt and pepper. Mix. Put cauliflower on baking sheet spread out. Bake at 400 for 25-30 mins, turning pieces every 10 minutes. Done when turning brown in color and soft.
