Easy Chicken Fajitas

I created this recipe when I was going through chaos in my life with trying to make weekly family meals.  Although I have since then designed a simple effective solution on how to do this with ease (I will be sharing my kitchen system solution in my upcoming new book, The Kind Kitchen), this particular day I decided to throw the chicken into a crock pot and see what happens. And you know what was made that day? This delicious recipe that so many of my family members now ask me to serve when they come over (or I am invited to their house). It is one of those easy healthy recipes that you can make in no time and also wow your guests. That is always a fun bonus (well, until they all want you to start cooking for them too)!

This recipe is about two things: healthy and easy. I try to use all certified organic ingredients when possible. Also this recipe does not need a dressing, but for those that like the extra something to it, I included a chipotle yogurt dressing. If you do not make your own yogurt (I am still in the learning phase of mastering this- once I do, you bet I will share it), buy a certified organic diary or non-diary yogurt. I also use Simply Organic seasonings that you can find here.  And if you are making this recipe as healthy as it can be, omit the dairy completely. You also can omit the tortilla and eat this in a bowl over quinoa.

Dr. Lisa’s Chipotle Yogurt Dressing

 Ingredients
  • 3-4oz organic chicken breasts
  • 1 package of Simply Organic Fajita Mix 
  • 1/2 cup water
  • 1 tbsp organic extra virgin olive oil
  • 2 organic red bell peppers
  • 2 organic green bell peppers
  • Organic taco size tortillas
  • Organic fresh salsa
  • 1 cup organic shredded red cabbage, cabbage slaw or broccoli slaw
  • Optional to add diced organic mango, peach or pineapple
  • Toppings (optional and does add bad fat so not recommended)
  • Organic yogurt chipotle dressing 1 tsp
  • Organic shredded low fat Mexican/taco cheese 1/4 cup or less
Instructions
In a crock pot put in chicken breasts. Put fajita mix, water and olive oil. Mix and turn on high (4 hours) or low (7 hours). Put on lid and let cook according to your time schedule. Shred chicken with a fork when done. Slice red and green bell peppers in strips. Stir fry in pan. Put in shredded chicken and heat with pepper mix for 5 minutes. Take a tortilla and layer 1 tsp of yogurt chipotle dressing (optional), add chicken and pepper mix, add shredded cabbage or slaw, add a sprinkle of low fat Mexican cheese,(optional) and add diced mango, peach or pineapple. Top with fresh salsa. Makes 8-10 fajitas.

  • 1 tsp of Simply Organic Chipotle Seasoning
