Homemade Chicken Nuggets

My Aspie at one time was hooked on conventional chicken nuggets. As a newborn he was a great nurser and as a toddler he ate my homemade baby food, not liking most of the veggies unless I sweetened them with baked apples or pears (one of my healthy baby food tricks). He was a great eater until his sensory issues kicked in around age 4.

That is when my life began to go from balanced and happy to spinning out of control. I was literally dealing with issues with food, home, socially outside and in school. It didn’t matter where we were or what we were doing, his sensory issues created such anxiety and meltdowns. I was absolutely overwhelmed and exhausted (and just birthed his baby brother). As a nutritionist, I could not understand how his older brother ate very well, how he was up to this point eating quite healthy and how his newborn brother was nursing fine too. Why all of a sudden does the smell of turkey make him throw up? Why when I put out yogurt does he scream at me? What am I doing wrong? I was so confused because there are picky eaters and then there are down right food avoiders.

And during this crazy time and needing some help having a newborn, my son was exposed to fast food chicken nuggets which he loved. Now, the first thought is to be thrilled he likes something other than croutons, cereal, bread and apples (yes, that was all he wanted). As a mom who was in overwhelm, my first thought was to be relieved he is eating something else (and even has some protein in it). And to be honest, there was a year or two there where I just let him have them because I chose to not have that battle. I was after all, in survival mode and picking my battles was my strategy. I knew fast food was unhealthy, but I needed easy.

That is until my newborn began to get older and all three boys were having similar routines (and I didn’t need as much help from others which gave me some control back over eating). The thing that really got me to make sure my kids no longer ate fast food chicken nuggets was the day my son had a smoothie made from acai, and my husband and I noticed he was nicer. At first we thought it was just a coincidence, but each time we gave him this smoothie (and couldn’t believe he liked it), he would be more focused and kind. His sensory and anxiety improved, resulting in less meltdowns. You can try that smoothie here.

Above is Luke making his own BBQ chicken nuggets today. The best decision I made over 10 years ago was taking back control of what my kids eat. I began my mission to get my son healthy and overcome ASD challenges through a healthy diet. I also continued his occupational therapy, chiropractic, social worker therapy and creating  the right academic classroom for him. I want to share with you my homemade chicken nuggets recipe my son loved. Making these is very easy and as my boys grew older, I experimented with putting organic BBQ and buffalo sauce on them. (Luke and his older brother are in high school and college now . They love the buffalo chicken nuggets pictured below, but would never have as younger kids of course).

Homemade Chicken Nuggets Recipe {Plain}

Ingredients

  • 1 lb of ground chicken
  • 1 egg
  • 2 cups bread crumbs (gluten free if trigger), 1 cup divided
  • 1 tablespoon of 100% maple syrup
  • 1/4-1/2  cup extra virgin olive oil

Instructions

Preheat oven to 350 degrees (400 if you like crispy nuggets). In a large mixing bowl, mix ground chicken, egg, 1/2 cup bread crumbs and maple syrup. On a plate put rest of bread crumbs. With hands, roll chicken mixture into small balls. Put balls into the bread crumbs, flattening them to nugget shape and covering with bread crumbs. Put into roasting pan and sprinkle with olive oil (you want to try to coat the nuggets with little oil so turn them over and get them lightly covered). Bake for 10 minutes, turn over and bake for another 10 minutes or until they are the texture you like.

BBQ or BUFFALO NUGGETS

As nuggets are cooking, put either organic BBQ sauce or Frank’s Hot Sauce in small bowl. With baking brush, brush each nugget on one side after the  20 minutes of baking in above instructions. Turn over and brush other side. Bake nuggets for 10 minutes more.
