Toasted Coconut Bliss Bites

When designing my Kind Gut™ program (my super successful leaky gut nutrition program), I had to make sure I focused on detecting and repairing a candida leaky gut. This type of leaky gut occurs when yeast overgrowth begins in the gut ultimately causing a leaky gut and health issues as a result. I decided to create a Stage One Candida Leaky Gut Menu which tackles and kills the yeast overgrowth which allows us to repair and restore leaky gut imbalances in Stage Two. A patient that suffers from yeast overgrowth must tackle this problem first, before fixing a leaky gut (and health issues related).

In doing this, I did a trial run (gathered up a few brave friends to try my recipes). My mission was to make sure a patient on my Stage One Candida Menu would have some snacks and desserts to enjoy. Knowing this would be the toughest menu I offer, I wanted to make it delicious and easy, making this moment of healing as simple as it could be.

We met this goal with success as we created an amazing Stage One Candida Menu (for those tested and diagnosed by me with a yeast overgrowth). My Toasted Coconut Bliss Bites is a new recipe being added to the menu, perfectly designed for patients who are tackling yeast overgrowth. And my patients that have moved or started on my Stage Two Leaky Gut Menu can enjoy these yummy bites too (actually anyone can)!

I chose to use as few real food ingredients as possible. I recommend using Nutiva unsweetened coconut flakes during the Candida Menu, otherwise if you need these a tad sweeter, try adding  certified organic vanilla extract and this certified organic 100% maple syrup.

Toasted Coconut Bliss Bites

Ingredients

  • 1 egg
  • 1 cup coconut flakes
  • organic cooking spray (coconut oil best)

Instructions

Preheat oven to 350 degrees. In a bowl whisk egg white and then add coconut flakes. Mix together. Spray cookie sheet with cooking spray (you can use olive oil, but I prefer coconut to stay with the taste). Make mixture into small balls. Place them on cookie sheet and once done, bake for 10- 15 minutes. You do need to watch these as they tend to burn quickly. They are done when they turn a light toasted brown (if only the bottoms turn brown you can eat like that or broil on low for 1 minute, being very careful to not burn them). Makes 6 small bites. Double recipe for bigger or more!

*If you want these a  little sweeter, add 1/3 teaspoon of vanilla and 2 tablespoon of maple syrup to the egg and coconut mixture. I also have sprinkled non-gmo mini chocolate chips into coconut mixture before rolling into balls for a chocolate coconut bite!  You cannot add these sweeteners in however, if you are trying to tackle yeast overgrowth.

Place them on cookie sheet and once done, bake for 10- 15 minutes. You do need to watch these as they tend to burn quickly. They are done when they turn a light toasted brown (if only the bottoms turn brown you can eat like that or broil on low for 1 minute, being very careful to not burn them).
  2. *If you want these a little sweeter, add 1/3 teaspoon of vanilla and 1/3 teaspoon of maple syrup to the egg and coconut mixture. You also can try using sweetened coconut flakes too. You cannot add these sweeteners in however, if you are trying to tackle yeast overgrowth.
