White Bean Chicken Chili

This chicken chili is a huge hit in my house and also with my patients. In fact, my boys keep pushing me to sell it. Yes, it is that good because we all know that kids are blunt and not afraid to tell you when your cooking or meal down right stinks. They will even roll their eyes and gag to add to their displeasure.

So you can imagine my delight when they wanted me to sell it. The only problem really is when I make an entire crock pot of this chili, it is all gone within one day. That drives me nuts (although I am happy to have a meal that 4 out of 5 family members love). I am all about making several large healthy meals at one time so my next few days are easier.

In this recipe I used 1 package of organic chicken breasts  (1-2 lbs depending on size of breasts). I try to buy organic beans that I can soak – a cooker pressure like the  Instant Pot here cooks beans in no time. However, when I cannot get the beans cooked ahead, I buy certified organic canned beans when I can find them. A good trick to having certified organic beans is buy a bunch when you find them. I use bone broth as this is a staple food in my home and in my Kind Gut™ program, but you can replace this with organic chicken broth. Homemade broths are healthier than store bought, but if you do buy from the store make sure you buy organic chicken broth.

If you want this chili to be vegetarian, omit the chicken and use vegetable broth. You also may want to add more white beans to replace the chicken. You can also add more green bell peppers as well.

White Bean Chicken Chili Recipe

Ingredients

  • 1-2 lbs. organic boneless, chicken breast, raw (omit if you want veggie only)
  • 2 organic green bell peppers
  • 2 organic onions
  • 4-5 organic garlic cloves
  • 1/8-1/4 cup jalapeno slices or green chili peppers, diced (optional)
  • 2 cans organic cannellini or great northern beans or soak fresh one
  • 1-2 cans organic small white beans or soak fresh ones
  • 3 tablespoon organic extra virgin olive oil
  •  1 package of Simply Organic Chili Seasoning Mix
  •  12 oz homemade bone broth
  • Sprinkle of Pink Himalayan Sea Salt and black pepper
  • 1 tablespoon of almond flour to thicken (optional)

Instructions

Combine all ingredients in crock pot with chicken on the bottom. Cook on low hear 5-6 hours or high heat for 3-4, mixing as you go along. About an hour before it is done, get two forks and shred the chicken. Mix and cook remaining time.
